1.烤箱预热上下220度。

2.准备好材料,挞皮买的市售的,提前从冷冻里取出回温。排入烤盘中。

3.将牛奶倒入干净不粘锅中,倒入细砂糖。

4.开小火进行加热,边加热边搅拌,让细砂糖融化。等到砂糖融化,搅匀,手在锅上方感受一下,不会烫手的温度,关火,让牛奶液慢慢自然降温到40度左右。其实下面步骤操作好,温度就差不多了。

5.煮好牛奶。另外取一个无水无油盆,打入鸡蛋。

6.用手动打蛋器搅打1-2分钟,搅打均匀。

7.然后过滤一下,把泡沫过滤掉。这是双层粉筛,所以只过了一次。上一步打蛋一定要打散,过滤才不会有蛋白团残留。

8.然后将凉到手温的牛奶液慢慢倒入过滤好的蛋液中,一边倒一边搅拌,搅拌均匀即可

9.搅匀后建议再过滤一下,蛋挞液更细腻。

10.蛋挞皮中,先放入清洗干净的蓝莓。随意放,看个人喜好。3-5粒都可以。

11.然后平均倒入过滤好的蛋挞液。

12.放入预热好的烤箱中下层,上下220,烤18-20分钟左右。看自家烤箱温度,烤到蛋挞液凝固,顶部出现焦糖色烤斑,上色满意即可。

13.烤好,取出,冷凉一会,不烫手即可开动。

小窍门&温馨提示
1、此方无需淡奶油,不过全蛋液合蛋挞液一定要过滤,把泡沫过滤掉,成品更细腻。
2、烤温和烤时请根据自家烤箱微调。
